Anise as an aromatic plant (Pimpinella anisum); Iran, India, is an annual plant that grows in Turkey and many other hot countries. Anise oil production in the world is between 40 and 50 tons per year.

Anise oil is also produced from a plant called Pimpinella anisum. Its oil is colorless and has a smell similar to liquorice.

Anise oil was evaluated by ancient civilizations, especially by the Romans, Egyptians and Greeks. The Romans used it in a spicy cake known as 'mustaceus', the Egyptians used it in bread, and the Greeks used it in a calming effect on the digestive system.

Anise, which contains versatile and rich compositions, is collected in July and August.

The oil is obtained by steam distillation from dried ripe fruits and seeds.
